DINNER IN 30 - Day 10 DINNER IN 7 BY TAJ

Today I headed back to work after a couple of easy days off. Work was very calm today, nothing out of the ordinary, just calm. I love work days when no one is yelling or complaining just calm. Everyone that sat at my desk today was pleasant and joyfully (I starting to think something was in the water), either way I’ll take it:)

My at home experience was not as pleasant; I came home to my shower going full blast with no explanation (I am not even going to touch this subject because it just freaks me out); needless to say I am going to invest in home security. After a couple of drinks and my BFF (Taj) talking me back to my senses, it was time to figure out my dinner for one meal. I did not take any thing out so Taj recommended shrimp saute in butter with garlic and spinach. It took me 7 min and was a tasty meal. I did not measure any thing I just simply sauteed the shrimp in butter with garlic, then threw in some spinach. A 5 Enjoy

DINNER IN 30 - Day 7 BABY SPINACH OMELET

I know that an omelet does not sound like something that is made for dinner, but it can be. I am one of those people who love to eat breakfast for dinner:) I leave out so early in the morning during the week I rarely have time to make myself breakfast, so I actually eat a lot of breakfast foods for dinner. I rarely eat pancakes, bacon and eggs, waffles, or cereal for breakfast; I am always preparing these items for dinner and I love it. So today after work and running around shopping I realize that I had not given any real thought as to what was for dinner this evening. Everything I could think of required something that needed thawing time; time I really didn't have if I wanted to eat dinner at a decent hour. Then it hit me, I had just brought eggs and quite a bit of baby spinach why not make omelets. Sounds good right? :)

I went on line to find a good recipe and came across this easy and tasty omelet:)
I was a little leery about the recipe calling for nutmeg ( I have never used nutmeg in an omelet before), but I have to admit it came out really nice, all the flavors mix together were awesome:)!! Now when you look at the picture you can see I had some trouble with the flip, but all in all it came out decent. My rating is a 5 on this dish. ENJOY:)!!!

BABY SPINACH OMELET

* 2 eggs
* 1 cup torn baby spinach leaves
* 1 1/2 tablespoons grated Parmesan cheese
* 1/4 teaspoon onion powder
* 1/8 teaspoon ground nutmeg
* salt and pepper to taste

Directions

1. In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

Tonight I made PASTA CON BROCCOLI; it was an easy dish that required not meat (I need a break from chicken). All I can say is IT'S A 5! Enjoy:)

* 1 cup heavy whipping cream
* 2 tablespoons butter
* 1 ounce tomato sauce
* 1/2 teaspoon minced garlic
* 1/2 cup broccoli florets
* 1/4 cup fresh sliced mushrooms
* salt to taste
* ground black pepper to taste
* 2 tablespoons grated Parmesan cheese

Directions

Today was a day of just hanging around the house. I couldn't really do anything but put my foot up and chill out. I have to go back to work tomorrow :( I really have enjoyed hanging out at home; I know my foot is all jacked up, but not going to work the last couple days was like a mini vacation:) I sat around watching day time TV, just mindless hours of The Wendy Williams Show (my God this show is a wreck, one that I could not turn from:) Criminal Minds repeats(one of my favorites), and MTV. Just a lazy, do nothing day:) NICE!!!!

After all my TV watching I decided to make Dinner around 4:30pm. Tonight's Dinner For One is LEMON HERB CHICKEN. It was something simple and quick; it turned out to be quite tasty. I give it a 4 on a scale of 1-5. Enjoy!!!

* 1 lemon
* salt and pepper to taste

DINNER IN 30 - Day 2 BAKED CHICKEN WITH HERBS

Today was a lazy day. I had to go to the doctor because I sprained my ankle at work on Saturday. I have been hobbling around the house for 1 1/2 day. Saturday was the worst. I fell on AN ORANGE (no laughter please)someone threw one on the ground right in front of a step. Someone tried to take me down with fruit (lol):) You cant image some of the jokes I have heard the past 2 days:) Well, the doctor told me today it was a bad sprain and it will take 72 hours for the swelling to peak, then go down. I have taken off tomorrow to allow that to happen, and keep it iced throughout the day. It a good thing I have decide to cook for the next 30 days because it would have been a challenge to do anything else.

I pulled out the IPOD, opened a bottle of red, and hobbled happily around the kitchen getting my DINNER FOR ONE READY this evening:) I tried to shake it to the music a little but having only one good foot you just image how I looked:)

My dinner pick this evening took a little more time, and time is all I had tonight so I said why not. I made BAKED CHICKEN WITH HERBS. I must say it was SOOOO GOOD!!! I always told everyone I did not like mushrooms, but after tonight I can never say that again. The way the mushrooms taste after they finish cooking in the sauce with chicken. SOOO GOOD:) The chicken came out so tender and tasty:) On a scale of 1-5, I give it a 5.

BAKED CHICKEN WITH HERBS

Ingredients:

* 6 chicken breast halves
* salt and pepper
* 1/4 cup butter
* 6 to 8 ounces sliced mushrooms
* 1 can (10 3/4 ounces) condensed cream of mushroom soup or cream of chicken soup
* 3/4 cup dry white wine
* 1 can (5 ounces) water chestnuts, drained, sliced
* 2 tablespoons chopped green bell pepper
* 1/4 teaspoon leaf thyme, crushed
* 1/4 teaspoon leaf basil

Preparation:
Wash chicken and pat dry; sprinkle with salt and pepper. Heat butter in a large skillet over medium-low heat; cook chicken slowly until browned, turning to brown both sides. Remove chicken pieces to an 11x7 or 13x9-inch baking dish. Add mushrooms to the skillet and sauté until tender. Add soup to skillet then slowly stir in wine. Add remaining ingredients and bring to a boil. Pour sauce over chicken. Cover baking dish with foil and bake at 350° for 25 to 30 minutes. Uncover and bake 20 to 25 minutes longer, until chicken is tender and juices run clear. Serve with hot cooked rice or noodles.

DINNER IN 30 - Day 1 GARLIC SHRIMP

I have finish my month long Pamperfest, and realize I don't want it to end. Pampering myself for a month was heavenly, it was something I now realize I need just for me. I was taking Me for granted, I did not fully value Me. Looking back at some of the things I did to pamper myself I realize that doing something small for myself like waxing my eyebrows or taking a bubble bath or talking to my good friend; all of those small things had a HUGH affect on my mood. It made me really happy. I was going through my life (like so many other woman) always trying to make other people happy. I am not saying that is a bad thing, but once in awhile a woman should spend time thinking of ways to make herself happy. I got to do that for 30 days straight, and I LOVED EVERY MINUTE OF TI!!! I loved it some much I don't want to stop.

I have decided to cook dinner for myself for 30 days (DINNER IN 30). After my DINNER FOR ONE post I realize that I really enjoyed cooking for myself. I never really took time to cook, maybe because I am always preparing the same meals over and over again. I have decide to go online and find new recipes to try over the next 30 day. I am going to organize my kitchen, turn on the music, break out the liquor (every cook should have a drinkie drink while cooking:) and get my cook on!!

My first meal was tonight and I decided to make GARLIC SHRIMP OVER RICE AND BROCCOLI.
It was an easy and quick meal; most of my time was spent preparing the rice. I also had to improvise I did not have any parsley in the house so I threw in some Broccoli:) I had my ipod on shakin it to QUEEN, drinking a Margarita and doing my thing in the kitchen. A nice way to pamper myself:)

Garlic Shrimp
This recipe for shrimp is made with lots of garlic, butter, olive oil, lemon juice, fresh parsley or basil, and seasoning.
Ingredients:

* 1/3 cup butter
* 1 1/2 to 2 pounds large shrimp, peeled and deveined
* 4 to 6 medium cloves garlic, crushed and minced
* 1/3 cup chopped fresh parsley
* 2 to 3 tablespoons lemon juice
* salt, to taste

Preparation:
In a large skillet, heat butter over medium heat until butter stops foaming, about 30 to 45 seconds. Add the shrimp and garlic and sauté over medium heat, turning frequently until the shrimp just turn pink, about 4 to 5 minutes.

Add the parsley, lemon juice, and salt; stir well. Remove the pan from the heat and serve immediately, with rice or a salad.

Day 30 - BUTTER PECAN & 20/20

Today is DAY 30 (YEAH ME!!!) of my month long pamperfest, and I am really proud of myself. Today I decided I would not go out to buy anything to pamper myself I would just finger it out when I got home from work; Today was my late night at work I did not get home until almost 7:30pm. After a sandwich for dinner I went on the computer to read my favorite celebrity gossip sites,and call a friend to gossip for awhile. Just some everyday stuff. While surfing the TV Guide I saw that Lady Gaga was going to be on 20/20 tonight; so I decided that I would pamper myself with a big bowl of BUTTER PECAN ice cream, and watch 20/20 tonight. I am really digging Lady Gaga right now and I would love to see her be herself in an interview. I have to admit I enjoyed the interview but wish it was a little longer; maybe I will Google her Oprah interview online this weekend.

My pamper suggestion DAY 30 indulge in a big bowl of your favorite ice cream (BUTTER PECAN) while watching your favorite show:)

I have really enjoyed every minute of blogging this past month; so much that I have decide to just continue after today. I have decided that I will take on another 30 days of pampering myself but with a little twist.

11:35 PM

Day 29 - BLOCKBUSTER NIGHT

Today was the day from hell!!! I had to deal with clients who were demons from HELL! I thought this day would never end, it just kept getting worse as the morning just crawl into the afternoon and it seem like the clock just stop when it hit 2:30pm. THANK GOD TOMORROW IS FRIDAY!!! To try escape a bad day I decided to go to Blockbuster after work to check out their 2 for 20 (Preview Movies Only) movie bin. It turn out they were having a sell and you can get 3 movies for $20; so I picked up The Hangover, My Sister's Keeper, and Star Trek. I picked up some takeout, put on my sweats, pull out my favorite blanket, and pop in Star Trek. I am a huge Star Trek fan and I did not get to see it in theaters so I was excited to sit and watch it finally. I must say I REALLY REALLY enjoyed the movie. I think I will watch The Hangover tomorrow if I have time:)

So my pamper suggestion this evening make it A BLOCKBUSTER NIGHT; go pick up a new movie and lounge:)

11:12 PM

Day 28 - BUY YOURSELF FLOWERS

Today was a quiet day at work and at home; work was kind of the same old routine nothing out of the ordinary. I had plans to catch the second night of American Idol with my BFF (she will hate that I used that acronym, LOL:) I must say it was funny as hell:) the guy splitting his pants, you gotta love it :) Well, on my way home I had to stop at the grocery store to put up a couple of things; while shopping I notice the flower bin. It made me smile. I have not received flowers in a while, so I thought why not buy myself flowers, you don't always have to wait for someone to send you a flower bouquet. When I got home I displayed them in a beautiful vase and put them out for everyone to see. I am smiling as I write this post:) Mission accomplished, I feel pampered today.

BUY YOURSELF FLOWERS for no reason other than it will make you smile:)

11:11 PM

Day 27 - A NEW BODY BUTTER/LOTION

Today was a nice day; I was able to sleep in a bit because I was working closer to home this morning. When you start your day relaxed everything seems to just flow. I was full of energy today, nothing could get under skin; I was just to happy:) After work I decided to hit a couple of store to just browse the aisles, something to do that requires no money (free is always good); I was not in the mood to go straight home from work. I was browsing through the body therapy aisle of Walmart when I came across Shea Body Butter Almond & Honey:) I fell in love the soft sweet smell. So after my workout tonight I tried out my new body butter and I must say I LOVE IT! It was a nice way to pamper myself, a little treat for my skin.

My pamper suggestion this evening treat yourself to A NEW BODY BUTTER/LOTION.

9:46 PM

Day 26 - 15 MINUTES OF MEDITATION

I had a really great day; I spent most of the day shopping for new boots (I LOVE LOVE LOVE SHOE SHOPPING) :) I have worn out my favorite riding boots, and I was out today replacing them. On top of enjoying the shoe shopping today, it was such a BEAUTIFUL DAY here in the northeast; it had to be about 50 degrees today. The sunny weather is such a nice change from all the rain and snow we've had the last few weeks. BEAUTIFUL, BEAUTIFUL DAY:) After I finish shoe shopping I came home and did my 30 minute work out (still going strong!), and I sat down for 15 OF MINUTES MEDITATION. AT first I felt a little wierd sitting with my legs crossed, eyes closed; however after the first 5 mins I was really into it. You have to calm your mind and focus on the quietness. It's very relaxing, I can see how it can be very therapeutic for mind.

My pamper such tonight is to de-stress by taking 15 MINUTES TO MEDITATE:) I guarantee you will love it.

12:05 AM

Day 25 - DINNER FOR ONE

Today I was able get a couple of things done that needed my attention in the morning and relax for the rest of the evening. Once I completed my tasks today I decided I would make myself a nice dinner. I lit a fire, pour a glass of wine, and pull out the cutting board. I don't cook for myself that often, its just me and I tend to make to much (it goes to waste). Tonight however I enjoyed every minute of it; I was actually humming while I cooked. I lit a couple of candle, sat in front of the fire and enjoyed my DINNER FOR ONE. Nice right? YES!!! :)

My pamper suggestion tonight make yourself dinner; pour yourself a glass of wine and enjoy:)

Day 24 - BUCKET LIST

Today I decided I would take time to think about some of things I would like to see or do in my lifetime. Lately I have been feeling like there are things I should be doing or maybe it's goals I feel like I have not accomplished yet; a feeling of discontent. I have kind of touch on this subject with friends and family throughout 2009; it started after I brought my first home. Buying a home was on my old 25 things I want to do or accomplish before I die list (a list I had since my very early 20's). It was a huge achievement for me last year, however instead of feeling good I feel like something is missing. So I took the time today to try and figure out what I need to do to put that fire in my belly again; I began to think about what are some of the goals and/or things I what to acheive before I died and started to list them one by one. As I was listing them I started to FEEL GOOD ABOUT ME. Maybe it was putting them on paper, but I started to feel like WOW I have a new purpose; something to focus on. I told myself I would not stop until I had 100 items listed; by the time I reach 100 I had a huge smile on my face:)

So today I am going to suggest that you pamper yourself by making your very own BUCKET LIST. I guarantee by the time you finish your list you will have a sense of purpose and a smile on your face:)

3:19 AM

Day 23 - HELP SOMEONE IN NEED

I was thinking earlier how would I pamper myself today. Then I knew right away what would make me feel good about myself; knowing that I did my part (even if it was not much) to help those in need (the catastrophe in Haiti). Watching CNN the other night made me realize that my not helping in some way was not acceptable. So that is exactly what I did; I donated to the Haiti Relief via the American Red Cross.

So my pamper suggestion today HELP SOMEONE IN NEED; it will put a smile in your heart:)

Text "Haiti" to "90999" to donate $10 to American Red Cross!

11:14 PM

Day 22 - RELAX IN FRONT OF THE FIREPLACE

Today was a long day; I had to worked late tonight and by the time I got home all I wanted to do was eat and curl up on the couch. So I picked up some take out, lit a fire, and watched CNN most of the night. I was really exhausted tonight and the warmth of the fire really help relax me:)

Pamper suggestion day 22 RELAX IN FRONT OF THE FIREPLACE:)

Day 21 - EVENING WITH A GOOD FRIEND

Work was very crazy today; you would have thought some of my clients actually had lost their mind. So when it was time to go home I almost ran out the door! On the drive home all I could think about was what my pamperfest was going to be this evening:) Then it hit me, why not spend the evening watching TV with a friend. So that is exactly what I did:) my night was full of American Idol (I never really watched this show before, but my God its hilarious), Margaritas, and laughter. If this not pampering yourself then I don't know what is:)

So my pamper suggestion day 21 is spend the EVENING WITH A GOOD FRIEND.

11:06 PM

Day 20 - LISTEN TO YOUR FAVORITE MUSIC

I have to admit today was pretty easy day; work was pleasant, spoke to my family and friends about a little bit of nothing (just a chance to catch up):) It was just a REALLY REALLY nice day:) I decided after my workout this evening I would just relax and listen to some music. A little Alicia, some Pink, and throw in a bit Jay it's all good:)

So my pamper suggestion this evening, chill out by LISTENING TO YOUR FAVORITE MUSIC:)

11:09 PM

Day 19 - TRY A NEW EXERCISE ROUTINE

Today I had a lot of errands to run so I could ready for work tomorrow. Lately I have been trying to maintain a 3 day a week, 30 min work out routine. The last month and half it has been a little hard to stay dedicated, but I can say I am sticking with it:) I have also been doing the same work out routine (30 min on the elliptical) for the last 1 1/2 months; it's becoming a bit boring and I am starting to lose some of my momentum. So today I decided to go out and get a new work out video; something to switch things up a little. It's called Walk at Home. I will be walking a mile each night right at home:) I have to admit I was a bit skeptical about the whole walking a mile at home, but it turned out to be a great workout:)!!

So my pamper suggestion today would be TRY A NEW EXERCISE ROUTINE, it will help add a little spice to mundane workout week!!!

1:55 AM

Day 18 - A HOT BUBBLE BATH

Today was one of those very hard emotional days; trying to figure out what went wrong; why did I close my eyes to SO MANY clues right in front of me. Why do we keep forgiving and forgiving when I should have said enough is enough; Well ENOUGH,ENOUGH,ENOUGH!!! I ending a very very hard weekend with A HOT BUBBLE BATH, my IPOD, candles, and a bottle of champagne (the whole bottle). The bubble bath and candles help soothe me and the bottle of champagne was there to relax me. Believe me it was pamper section I really needed. So when life throws egg in your face, get a towel and wipe it off; then go run A HOT BUBBLE BATH, light some candles, turn on the music and just RELAX. Tomorrow will be better.

7:34 PM

Day 17- GO WINDOW SHOPPING

Today is a not good day :( All I can say I hope this evening is better). As I was told (Have Confidence). So to kind of take my mind off things I did a little window shopping this afternoon. It help me feel a little better. So when you need to a distraction from your increasing bad day(horrible weekend); pamper yourself by doing some WINDOW SHOPPING. It will brighten your day if only for a little while.

12:06 AM

Day 16 - GET A PEDICURE

After a very long day I get to sit down and relax a bit:) It was snowing here in the northeast early this morning and I thought I would not be able to get much done this morning early afternoon; but I was able to get a PEDICURE today:) It was relaxing and something I was able to do just for myself:) It is a ME activity. So my pamper advise today would be go to the nearest salon and GET A PEDICURE; your feet will thank you and you will leave the salon knowing that you did something just for you today:)

2:54 AM

Day 15 - ONE OF YOUR FAVORITE MOVIES

Tonight I had to work a little late so I decided to get some takeout and pop in one of my favorite feel good movies. Sex and the City the movie is one of my go to movies to relax and just watch for fun:) So I had my favorite blanket wrapped around me, an order of egg foo young in front of me, and Sex in the City in the DVD; a good way to pamper yourself and end a Thurs night. My pamper suggestion today is pop ONE OF YOUR FAVORITE MOVIES in the DVD player and relax:)

2:00 PM

Day 14 - CRAWL IN THE BED WITH A GOOD BOOK

It is 11pm and I am about to call it a night; I am a little tired and could use something to help me total relax. I was looking at my bookshelf and realize there are a few books that I brought with the intention of reading in the near future. So now is the time to pick up a forgotten book. I have tried to watch the film adaptation of this book but could never really get into it; I brought the book when the movie first hit theaters, but never took the time to read it. The only disadvantage I have now is I can't create the characters in my mind because I have seen the movie first (bit and pieces). I like to read the book first then see the movie. My book choice this evening is The Da Vinci Code. I am about to pamper myself by CRAWLING IN BED AND READING A GOOD BOOK:)

1:00 AM

Day 13 - LIGHT CANDLES JUST FOR YOUSELF

I have just finish my day and now I am relaxing:) I am going to watch Criminal Minds until it is time for me to go to bed, but I decided Why not watch my favorite show with some candles lit and my favorite blanket. Sound great doesn't it (YES!!!) The candles make loungefest more relaxing and cozy:) And remember IT'S ALL FOR YOU! So my pamper suggestion this evening is LIGHT SOME CANDLE JUST FOR YOUR YOURSELF:) It will make you feel like you doing something a little romantic for you.

Oh, and a glass of wine wont hurt either:)

11:44 PM

Day 12 - BODY SCRUB

Today was a long day, between running errands and handling some personal issues I thought I would not be able to pamper myself today. My brother stop by to check on me today, and I wind up helping him with some things he needed to get done. So it is after 11pm and I just finish my pamper suggestion for today. But it was worth the wait;I took a long hot shower and gave myself Sea Salt Body Scrub. My skin feels so soothe and the heat from the shower has relaxed my whole body. It was a nice way to end a very long stressful day. So my pamper suggestion tonight would be give yourself a nice BODY SCRUB your skin feeling amazing and you body will be totally relaxed after the hot shower:)

8:59 PM

Day 11 - WAX YOUR EYEBROWS

I was still a little under the weather today so I decided to do something that would make me feel and look good. I have been neglecting my eyebrows for sometime now; I have been just touching them up every now and then. I looked at myself in the mirror today and realize I looked a bit run down; so I pulled out the wax, heated it up and went to town on my brows. I don't know why, but every time I go get my eyebrows done or I wax them myself, I feel prettier afterward. I feel better about myself; I feel like I am taking care of ME:) Pamper suggestion for day 11 GO GET YOUR EYEBROWS WAX OR YOU CAN DO THEM YOURSELF; either way I bet you will feel good about yourself when you are done:)

2:47 AM

Day 10 - A HOT CUP OF TEA

I know a HOT CUP OF TEA does not sound like something one would do to pamper themselves, but when you are so sick that you can barely sit up without feel pain a HOT CUP OF TEA is the best thing in the world. It soothes the throat, helps settle your stomach, and warms the body up when you have chills running up your spine. I woke up in the middle of the night with the worst pain in my stomach and chills running through my body. It was horrible; to make things worst is I had to go to work feeling like death was knocking. Thank God it was only a half day. I came home, pull out my favorite blanket, made a HOT CUP OF TEA (it was heaven) and feel asleep for 8 hours. I am still feeling like death but I promise no matter what I would finish my 30 days of pampering:) So my pamper suggestion when you are feeling like death is at your back door; A HOT CUP OF TEA!!!

8:25 PM

Day 9 - NEW YEARS RESOLUTION LIST

Happy New Year to Me!!! The year is 2010, out with the old and in with the new. I get a fresh start, no hanging on to past mistakes or unfulfilled goals. 2010 is the year I will find and fulfill my destiny. I have decided the best way to pamper myself on this day would be to make a NEW YEARS RESOLUTION LIST that is short (only 5 things)so it is attainable. 5 resolutions that will MAKE ME FEEL GOOD ABOUT BEING ME:) I will not list the 5 here but I will tell you one of them.

FOLLOW THROUGH AND FINISH MY 30 DAYS OF PAMPERING MYSELF!!!:)

So my pamper suggestion on this New Years Day is sit down and create a New Years Resolution list. Something short and attainable; A list of 1 to 5 things you can do that will MAKE YOU FEEL GOOD ABOUT Yourself.

12:59 AM

Day 8 - CONVERSATION WITH SPECIAL FRIEND

Today is New Years Eve and I was trying to decide what my pamper suggest would be. Then I realize what it would be while on the phone with my best friend, drinking mix drink:) We were laughing, reminiscing about old times, discussing celebrity gossip, we talked about a little bit of everything and nothing at all. It was time out our busy day we took to just hang out together (on the phone because she lives so far away). I love her so much and really miss her. I realize in the middle of our conversation that is was something nice and special I was doing for myself today; Hanging out with my GOOD FRIEND OF 20 YEARS ;) So my pamper suggestion today is have A CONVERSATION WITH A SPECIAL FRIEND, I bet it will make you feel loved, happy, and put a smile on your face:)
